Best Pot Roast Recipe – Instant Pot Pot Roast

This quick yet juicy and tender instant pot pot roast makes the perfect feel-good dinner.  It's all in one pot and can be used to make leftovers for a few days!

Oh boy, I can be kind of impatient when it comes to making a good wholesome meal. I don’t like to wait for hours for a pot roast, but I love the flavor and tenderness that a full day of cooking gives it.

Enter the all-wonderful Instant Pot for the best Instant Pot pot roast recipe.

Out of all the recipes I’ve used, I will always hands-down use an Instant Pot to cook roasts because they turn out so juicy, tender and flavorful!

What is a pot roast?

What cut of meat makes the best pot roast?

Choose the beef chuck roast because it makes the best pot roast.

chuck roast is tender and falls apart easily when slow-cooked. This tough meat is cut from the shoulder just above the short rib and cooks to a perfect tender pot roast. It falls apart because of the chuck roast’s amount of marbling (fat you can see throughout) that makes it juicy when cooked down. This also makes it easy to shred. A chuck roast is melt-in-your-mouth delicious!

How to Make a Pot Roast in the Instant Pot

Below I’ve listed all the ingredients I use but you can adjust or simplify however you’d like to fit your own taste.

Ingredients

  • 3-5 pound beef chuck roast (frozen or thawed)
  • 1 tablespoon oil
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika – optional
  • 1 package of beefy onion seasoning packet
  • 1 bag or 2 lbs of baby red or white potatoes
  • 1 bag of carrots
  • 3 large yellow onions
  • 4 cups beef broth (or 3 cans)
  • 2 tablespoons Worcestershire sauce – optional
  • 1/2 cup water

Directions

1.If thawed meat, turn the Instant Pot on to saute and add oil to the bottom

2. Season the meat with salt, pepper, onion powder, garlic powder and paprika generously on all sides.

3. Place meat (seasoned and/or thawed) into pot and sear meat on all sides

4. Pour beef broth, water, and beefy onion seasoning packet over the meat. If frozen, add other seasonings as well.

5. Cut potatoes and onions into large chunks and add to pot on top of meat

6. Close lid and make sure the release is closed, set the Instant Pot on beef stew or on high for 60 minutes (add 20 minutes for frozen meat)

7. Once finished cooking do a natural release for 10 minutes, then a quick release until the float valve goes down.

8. Remove lid, transfer roast and potatoes to a warming dish or platter.

9. Set cooker on high and put carrots in the juice and cook for 10 minutes.

10. Remove when done and put together with meat and potatoes and juice.
