This is another one of my favorites to have on hand in my pantry for those days I just don’t want to cook but I really want some comfort food.
Anything Mexican will make me happy, so this canned burrito in a jar is a perfect meal prep option.
I have done this with beef, chicken and vegetarian and all of them were great so choose whichever variation you prefer and simply add the ingredients as a raw pack and pressure can them as stated below.

Ingredients
- 1/4 Cup of rice (as little as possible as rice is starchy preventing heat to disperse equally)
- 1/2 Cup of dry pinto beans
- 1/3 Cup of bell pepper, diced
- 1/3 Cup of onion, diced
- 1 Cup of ground beef, browned and drained (optional)
- 4 Tablespoons of Rotel
- 1 Tablespoon of taco seasoning
- 1/2 Teaspoon of salt
- Beef or vegetable broth to fill quart jars to 1-inch headspace
Get all the goodness of the Mexican favorite without the heavy tortilla. This recipe uses rice (or substitute quinoa) instead.
NOTE: The starch in rice can prevent heat from reaching the center of the jar, creating a “cold spot” where bacteria can thrive. I tend to put the rice on the very bottom in a thinner layer (or not at all) as I don’t use a lot of carbs in my cooking… But always check your own resources on whether you want to put rice in or not for your own safety reasons.
Steps to make Burrito in a Jar:
1. Add the ingredients to each jar in the order above (if you choose to add rice, place at bottom, see below)
2. Pressure can quart jars at 10 lbs for 90 minutes.
3. To Use: Heat and place in warm tortillas with lettuce, tomato, and whatever other burrito fixings you like.
Don’t waste time waiting in line for and paying too much for a burrito or burrito bowl can be available right away at home if you want! Just make your own burrito bowl and prepare it in a trendy mason jar that you can show off.
