My husband had been over in Afghanistan for some time so he was familiar with Indian food and loved it - and I had tried it only a few times and loved it myself.
We would often go to a local Indian restaurant about every other week, but I never thought about making it myself... until we saw this amazing Indian cooking show on PBS with Alamelu Vairavan called Healthful Indian Flavors with Alamelu..
We used to watch Alamelu on the weekends make these wonderfully appetizing Indian dishes. She really did teach me a ton and I urge you to check out Alamelu Recipes!
It was because of her that we decided to try cooking Indian food ourselves. Our favorite that we made was a chicken masala. It is kind of like the Aloo Gobi, but it doesn't have the potatoes in it.
And since I've been on Keto and trying to convert dishes into a vegetarian, this was perfect to leave out the chicken.
This meal really is super easy to whip up because you just put everything together in a dish and cook it up!
I had the pleasure of speaking to Alamelu back in 2019 just before the pandemic came around and she was just so sweet on the phone... I really wished I was able to meet her in person. She was working on a vegetarian cookbook at the time and she later published it in November 2020 - and it is fantastic! I loved all the recipes in it!
