Place 2 tablespoons of the filling in the center. Fold the bottom corner over the filling, tuck in the sides, and roll up tightly, sealing the edges with beaten egg.
4 Heat oil to 350°F in a deep pan. Fry egg rolls until golden brown and crispy, about 3-4 minutes.
5 Drain on paper towels and serve hot with extra Thousand Island dressing.
