Corned Beef Reuben Egg Rolls Recipe

Ingredients:

  • 1 cup cooked corned beef, shredded
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 8 egg roll wrappers
  • 1/4 cup Thousand Island dressing, plus extra for dipping
  • 1 egg, beaten (for sealing wrappers)
  • Oil for frying

Instructions:

  1. In a bowl, mix the corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing.
  2. Lay an egg roll wrapper on a clean surface with a corner pointing toward you.
  3. Place 2 tablespoons of the filling in the center. Fold the bottom corner over the filling, tuck in the sides, and roll up tightly, sealing the edges with beaten egg.
  4. Heat oil to 350°F in a deep pan. Fry egg rolls until golden brown and crispy, about 3-4 minutes.
  5. Drain on paper towels and serve hot with extra Thousand Island dressing.
