Ingredients:
- 1 cup cooked corned beef, shredded
- 1 cup sauerkraut, drained
- 1 cup Swiss cheese, shredded
- 8 egg roll wrappers
- 1/4 cup Thousand Island dressing, plus extra for dipping

Instructions:
- In a bowl, mix the corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing.
- Lay an egg roll wrapper on a clean surface with a corner pointing toward you.
- Place 2 tablespoons of the filling in the center. Fold the bottom corner over the filling, tuck in the sides, and roll up tightly, sealing the edges with beaten egg.
- Heat oil to 350°F in a deep pan. Fry egg rolls until golden brown and crispy, about 3-4 minutes.
- Drain on paper towels and serve hot with extra Thousand Island dressing.
